Fresh Lemonade with Lavender Simple Syrup

We as a community have been dealt quite a blow these last several weeks. Perspective is key in these difficult times. I guess that is where the cliché “when the world serves up lemons, we make lemonade” comes from.

I decided to make my delicious lemonade using fresh lemons with  Lavender Simple Syrup. Fresh Lavender, as well as lemons, are abundant now. You can find them at your local farmer’s market or if you are lucky enough, pull them from your own trees. The simple syrup can be made ahead and refrigerated for up to one week.

Ingredients
3-4 large lemons juiced (with pulp optional)
1 c sugar
1 teaspoon fresh or dry lavender buds
Water

Directions
1. Simple Syrup: take equal parts sugar (lavender optional) and water and place in a small pot. Stir/mix well and bring both to a boil. Turn off burner and let stand to cool.
2. Juice lemons and add syrup to 32 oz water.
3. Add to pitcher.
4. Serve
