Move over Bone Broth and make room for another awesome CALDITO (broth/soup), the plant-based Mushroom Broth. Using Mushrooms for their medicinal properties is nothing new, but now with the renewed interest in the benefits of broth and the availability of an array of beautiful mushrooms things, just got easier! If you have a simple crock pot, you could look forward to a hot cup of broth when you walk in the door from a long day.
This mushroom broth recipe calls for fresh mushrooms, veggies and miso paste (optional), as well as a few other ingredients. As I love to mention, use your creativity and use what you have in your fridge to substitute ingredients that you might not have. Recipe:
8c Water
½ Pound each of Shitake, Golden Enoki, Maitake Mushrooms
1 large Onion (roughly chopped)
1c Carrots (roughly chopped)
1c Italian Parsley (roughly chopped)
2” piece of fresh Ginger (chopped)
2 tbsp Apple Cider Vinegar
2 tbsp miso paste (white or red)
6 sprigs fresh Thyme (bundle herbs with kitchen string)
1 bay leaf
1 tbsp coarse sea salt (I use mushroom salt)
Directions:
Place all ingredients in a crock pot/slow cooker on low. Cook for 5 hours and up to 8 hours. The longer it cooks, the more the flavors infuse. Strain contents into bowls or air tight jars. Simply Delicious! Pour individual cups of broth and enjoy the subtle flavors.

I had the pleasure of meeting a lady/customer, just a little younger than myself. In speaking with her, she shared with me the health challenges she has encountered, which were quite a lot! After making the mushroom broth over a period of several weeks, this lady now walks to the Farmers Market, instead of in a wheelchair and due to her recovery, I contribute much of her success to the mushroom broth. YES, I know, you may think I am making this up! No, so I decided to take on the challenge! As we age, a number of problems come up, such as weak knees, weight gain, sore joints, you name it! I do not believe in a lot of things, UNLESS I try it for myself. After several days, I am NOW A BELIEVER!
