Portobellos are delicious and very versatile. Prepare the entire recipe and if you have leftovers, prepare a baguette or crunchy bread for a delicious sandwich or add to gourmet greens and use the leftover sauce as a dressing.
Recipe
6 large or 8 medium portobello mushrooms (stems removed) gills cleaned (optional)
1 tbsp olive oil
1/4 tsp salt and pepper
Pre-heat oven at 400℉
Lay mushrooms on a parchment lined baking sheet gills up.
Roast 15-20 minutes. Mushrooms will collapse in their juices.
Meanwhile, prepare the Chimichurri Sauce:
1 bunch cilantro, whole leaves, and some stems
1 oz basil leaves (will yield more than 1 cup)
4 scallions or green onions roughly chopped
3 cloves garlic
3/4 c olive oil
1/4 c rice vinegar
1/2 tsp salt plus extra to taste
Blend all ingredients together till smooth.
Top each mushroom with 2 tbsp Chimichurri. I always end up with a little extra sauce in the bowl! Delicious!?
