Quinoa With (My Famous) Mushrooms

Quinoa With Mushrooms Recipe (Serves 2-4): 

1 cup quinoa rinse and drain
3 cups mixed mushrooms (crimini, oyster, king oyster, shiitake, and woodear)
1 tbsp olive oil or 2 pats butter
1/2 medium sweet onion chopped
1 c fresh parsley
3 sprigs thyme (take off stem)
1 1/2 bone broth, vegetable broth or water
1/4 tsp of Salt and pepper

Directions: 

Place liquid in a saucepan and bring to boil.
Quickly add quinoa and return to boil 1 minute and reduce to low flame till liquid has absorbed approx 15 minutes. Remove from heat. It can remain covered. Set aside.
Heat a sauté pan and add oil to stir-fry mushrooms, 1/4 c parsley, onions, and thyme. At this time add salt and pepper. Cook till mushrooms are soft and onions translucent. Set aside.
In a serving bowl place quinoa, mushrooms and remaining parsley. Fold together!
