Stuffed Baked Shiitake Mushrooms

Since Shiitake Mushrooms are immune boosters as well as anti-aging, I think of many ways to ingest these savory juicy jewels. Not only are they one of the most sought after fungi,  they hold within them precious  antibodies and minerals. Roasting/Baking brings out the savory note in the shiitake. For this stuffed and roasted recipe I used what I had in the fridge. I had parsley, the stems of shiitake, spinach, onions, thyme and bread crumbs. Use your imagination and build a great stuffed shiitake!

Recipe
6-8 large shiitake, stems removed and slightly hull and reserve for mixture
1 c spinach chopped
1 tbsp butter – cut into 8 small pieces 
1 tbsp olive oil 
¼ c fresh bread crumbs 
1 c onions, sweet Maui minced
1 tbsp parsley, finely chopped
1 tsp thyme (remove herb from stem)
1 c reserved stems chopped 

Directions
1. Preheat oven to 375 degrees and prepare parchment lined baking tray
2. Heat sauté pan and stir fry reserved mushrooms, onion, parsley thyme and spinach. Stir fry without olive oil for 2-3 minutes and allow the mushroom bits and onions to sweat.
3. Then add olive oil. Continue to cook till soft. 
4. Prepare shiitake and flatten them on the bake sheet.  After mixture is done, stuff the shiitake with a spoon.
5. Place a piece of butter on top.
6. Sprinkle with bread crumbs.
7. Add salt and pepper. 
8. Place in the oven and roast for 15 minutes or when ready.

The mushroom will melt in your mouth. It is a great appetizer!
