Hearty bone broth meals jampacked with nutrients! Use prepared broth (see my blog on my mushroom broth or bone broth recipe) or vegetable to prepare sauces, gravy, stews, soups or single servings of broth only. These are two simple soups you can prepare. Once you get the hang of it and realize how easy it is, use what you have in your fridge and get creative!

Soup 1:⠀
1 c mushrooms sliced ⠀
½ c onions sweet (Maui)⠀
1 c kale or spinach ⠀
1 c (heaping) broth

Soup 2: ⠀
1 ear of corn roasted (remove cob) Lay an ear of shucked corn flat on a cutting board and cut down the side of the cob to remove the kernels. ⠀
1c onions (sweet Maui)⠀
1 c squash green cut into 1-inch cubes⠀
1 c kale (Tuscan) or spinach ⠀
1 c (heaping) broth⠀

Sauté all vegetables together until soft about 7 minutes. Add broth and cook through (medium to low heat) approx. 5 minutes. Serve hot. Makes 1-2 servings. ⠀
